“Vegetables are good for you” is one of those phrases that gets repeated so often it stops being examined.

It sits in the same category as “drink more water” or “get some fresh air.” Simple. Harmless. Obvious enough that questioning it makes you sound like you’ve spent too much time on the wrong side of the internet. Which, to be fair, is where half of modern nutrition discourse now lives, screaming into the algorithm like raccoons trapped in a wheelie bin.

But the more I read, the more I think the phrase is carrying a meaning that has drifted far from reality.

When people say vegetables are good for you, they usually mean they are healthy. Not merely useful, not occasionally helpful, not better than starvation, but positively beneficial to the individual eating them. Vegetables are treated as nutritional saints. If a food comes from a plant, it starts with a halo. If it comes from an animal, it starts with a defence lawyer.

That assumption is worth challenging because plants are not trying to nourish humans.

A plant does not want to be eaten. Fruit complicates the issue because fruit often does want to be eaten, at least in the evolutionary sense. It is a delivery mechanism for seeds, wrapped in sugar, colour, and scent because plants, like software companies, eventually discover distribution. But the rest of the plant is different. Leaves, stems, roots, seeds, and defensive structures are built around survival. Plants cannot run away, so they use chemistry. Toxins, irritants, digestion inhibitors, mineral binders, and compounds that interfere with biological systems are all part of that strategy.

Humans have become remarkably good at dealing with those defences. We cook plants. We soak them. We ferment them. We peel them. We grind them. We selectively breed them. We process them until they become tolerable. That is not a small achievement. It is one of the reasons humans survived in so many environments. But the need to neutralise a food before it becomes edible should at least complicate the modern instinct to call it healthy by default.

Modern nutrition often treats food like a spreadsheet. Protein, carbohydrate, fat, fibre, vitamins, minerals. Add the numbers together and declare the object healthy. But food is not merely a container of nutrients. It also has bioavailability, digestibility, defensive chemistry, preparation requirements, and a cost imposed on the body to extract whatever nutrition is present. A kilogram of leaves on paper is not the same thing as a kilogram of usable nutrition in a human body.

This is where the evolutionary picture becomes more interesting.

There is a body of research arguing that humans spent a significant portion of our evolutionary history relying heavily on animal foods. Our hunting behaviour, cooperation patterns, tools, digestive characteristics, and the archaeological record all point toward a species that extracted enormous value from large animals. That should not be surprising. A large herbivore is an extraordinary food source. Meat, fat, organs, marrow, hide, bone, tools, fuel, shelter, status, cooperation; one animal can feed a group and support an entire culture around the hunt.

Compared with that, chewing through chemically defended plant matter for marginal calories does not look like the prize. It looks like the fallback.

That does not mean plants were irrelevant. It means their role may have been misunderstood. Vegetables may have been good not because they were optimal, but because they were available when optimal foods were not. At some point, the world changes. The herd moves. The climate shifts. The hunt fails. The reliable food source becomes unreliable. Maybe humans helped drive certain animals away or into extinction. Maybe environmental pressure did the heavy lifting. Reality, being the petty little bureaucrat it is, rarely offers clean causes.

Either way, the group that can only eat its preferred food is vulnerable. The group willing and able to eat almost anything has options.

This is where vegetables become useful.

The humans who could tolerate plants, process them, cook them, ferment them, grind them, soak them, and extract enough energy to survive a lean period had an advantage. They did not need to thrive on plants. They only needed to avoid dying. That is not a trivial distinction. Survival does not require optimal health. It requires reaching the next season.

This is the meaning of “good” that makes more sense to me. Not good as in ideal for the individual. Good as in good for the continuity of the species. Good as in widening the survival envelope. Good as in keeping a population alive through a period where the preferred food source was gone, scarce, dangerous, seasonal, or unreliable.

That idea gets lost because modern diet arguments are usually identity arguments wearing a lab coat. The plant side wants vegetables to be nutritional heroes. The carnivore side wants meat to be the whole story. Both are trying to turn an adaptive mess into a clean moral position, because apparently humans saw religion decline and decided lunch could carry the burden.

The reality is probably less tidy and more practical. Humans were opportunists. We hunted when hunting worked. We scavenged when scavenging worked. We ate fruit when it was available. We dug up roots when we had to. We processed seeds when the alternative was starvation. We used fire, tools, culture, memory, and cooperation to turn marginal things into food.

But necessity is not optimisation.

That is the point hidden inside the argument. The fact that humans can survive on a food does not mean that food is healthy. Humans can survive on all sorts of things. We are annoyingly durable animals. But the more useful question is not whether something can keep a person alive in bad conditions. The useful question is whether it is the thing we should build health around when better options exist.

Animal foods pass that test more cleanly than plants do. A diet built around meat, fat, organs, fish, eggs, and other animal foods can provide dense, bioavailable nutrition. A diet built only from vegetables quickly runs into problems. Essential nutrients become limiting. Deficiencies emerge. Supplementation becomes necessary. The diet eventually depends on external intervention.

That alone should make the phrase “vegetables are healthy” less comfortable than it is.

Healthy compared with what? Compared with starvation, absolutely. Compared with eating nothing, unquestionably. Compared with processed industrial food, often. Compared with a diet built around nutrient-dense animal foods, the claim becomes much harder to defend.

This is the mistake I think modern nutrition has made. It has taken something that helped humans survive and promoted it into something humans should optimise around. The emergency bridge became the main road. The fallback strategy became the recommendation. The famine food became the health food.

Vegetables were useful because they expanded the range of conditions humans could survive. They allowed populations to persist when preferred foods were unavailable. They gave humanity optionality during periods where strict dependence on large animals may have been fatal. That does not automatically make them healthy in the modern individual sense. It makes them historically useful.

That is why the phrase “vegetables are good for you” feels both familiar and wrong. It may preserve an older truth while expressing it badly. Vegetables were good because the humans willing to eat them survived. The ones who could not or would not adapt may not have made it through the bottleneck. But the fact that a food helped carry humanity through scarcity does not mean it should sit at the centre of abundance.

A thing can keep you alive without making you healthier. A thing can prevent starvation without being ideal. A thing can help a species survive while still being inferior to the food it replaces.

Vegetables were not the prize. They were the backup plan.

And the people willing to eat the backup plan were still around when the meat came back.
